Chicken Tikka

African Chicken Recipe

This Kenyan Chicken Tikka recipe is a curry style dish of Indian inspiration. This traditional Kenyan recipe of chicken made in a stew like stock is a classic Kenyan treat.

The British named tikka invented it with a cream sauce. However, most Africans are lactose intolerant so the proper tikka doesn't really apply in Africa.

Ingredients

  • 1 whole chicken, cleaned
  • 2 tsp tomato puree
  • 1 tsp curry powder
  • 3 garlic cloves, crushed
  • 3 tbsp oil
  • salt and black pepper to taste
  • 1/2 cup tamarind juice
  • salt, cayenne pepper, and sugar to taste

Method

  • Combine the tomato purée, curry powder, garlic, salt and pepper with 3 tbsp oil. Mix thoroughly with a whisk then use as a rub applying it to both the inside and outside of the chicken until it's completely coated
  • Cover and allow to marinate for 1 hour for the flavour to penetrate the meat.
  • Grill or oven roast the chicken until browned and tender.

Sauce

Add the salt and cayenne pepper to the tamarind juice and then add enough sugar to get a sharp yet sweet flavour.

Cut the chicken into pieces, and serve over a bed of rice. Yummy good!

Tip

Tamarind juice is available at most Indian or Asia supermarkets.
