Kachumbari

African Coleslaw

Kachumbari is a cold side dish of shredded or finely chopped vegetables in a vinegar or lemon juice dressing. This is a lovely side dish known to some as African coleslaw. Jim and I had it made with shredded cabbage and carrot quite often. While I missed a traditional green salad at times while in Kenya, this dish made me think a bit more of home.

The Kachumbari Recipe

Ingredients

  • 1 red or green chili (de-seeded, cut lengthwise into fine slivers)
  • 2 small onions (thinly sliced)
  • 5 thinly sliced tomatoes
  • 1/2 cup finely chopped Coriander leaves
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lime
  • 3 tbsp olive oil

Methold

  • Place the sliced tomatoes, onions, chilli and chopped coriander into a large serving bowl.
  • Add the lime juice and olive oil and toss evenly into the mixture.
  • Season with the salt and freshly ground black pepper.
Serve and enjoy!
