Kachumbari
African Coleslaw
Sponsored Links
Kachumbari is a cold side dish of shredded or finely chopped vegetables in a vinegar or lemon juice dressing. This is a lovely side dish known to some as African coleslaw. Jim and I had it made with shredded cabbage and carrot quite often. While I missed a traditional green salad at times while in Kenya, this dish made me think a bit more of home.
The Kachumbari RecipeIngredients- 1 red or green chili (de-seeded, cut lengthwise into fine slivers)
- 2 small onions (thinly sliced)
- 5 thinly sliced tomatoes
- 1/2 cup finely chopped Coriander leaves
- Salt and freshly ground black pepper to taste
- Juice of 1 lime
- 3 tbsp olive oil
Methold- Place the sliced tomatoes, onions, chilli and chopped coriander into a large serving bowl.
- Add the lime juice and olive oil and toss evenly into the mixture.
- Season with the salt and freshly ground black pepper.
Serve and enjoy!
