Swahili Rice With Meat

Another traditional food of Kenya is Swahili pilau. Rice is a mainstay food in Kenyan cooking. When prepared with meat such as beef, mutton or chicken, it makes an enjoyable main dish meal.
This dish was my first experience to try goat meat. Very tasty!
Pilau RecipeIngredients- 2 cups washed and drained rice
- 1 pound meat cut into large cubes (beef, mutton, chicken, goat)
- 1/2 tsp cumin seeds
- 1/2 tsp whole black pepper
- 1 tsp whole cloves
- 2 cinnamon sticks
- a few cardamom pods
- 2 tsps crushed fresh ginger
- 2 tsps crushed fresh garlic
- 3 onions sliced into rings
- 3 tomatoes finely diced
- 4 small potatoes, peeled and quartered
- 1/2 cup sultana raisins (optional)
- salt to taste
- 4 cups warm water
Method- Mix cumin, black pepper, cloves and cinnamon in a cup of warm water. Stir and set aside.
- Heat oil in heavy saucepan, fry onions until golden, add garlic and ginger and fry until well blended.
- Add the meat and brown it well. Reduce the heat and simmer for 30 minutes
- Remove the meat and onions and set aside.
- In the same pan and the rice, stirring to coat evenly with the oil.
- Add the spices and tomatoes and stir for 5 minutes.
- Add the four cups of water. Bring to boil and add the potatoes, salt, raisins, meat and onions. Stir and cover, continuing to cook on low heat for 10 minutes.
- Remove from heat, cover with foil and keep in a warm oven for 20 minutes.
This recipe is one I clipped from the local Kenyan newspaper when we were visting in 2007. They suggested it is best served with hot kachumbari or vegetable salad. It serves four.
