Plantain Bananas

Fried Plantain Recipe

Plantain bananas are a starchy, rather than sweet staple food in much of Africa. Plantain, or 'potatoe of the air', is a cooking banana that comes from a type of banana plant.

They do need to be cooked before eating, and are served either boiled, steamed, baked or fried.

Like the roasted corn on the cob snack, they are grilled on a charcoal fire and served by street vendors in many African cities.

Ingredients

  • cooking oil
  • plantains - one per serving
  • salt
  • African hot sauce

Method

  • Peel and cut plantain into thin slices or in half lengthwise.
  • Heat oil in a skillet and add plantin in a single layer.
  • Fry until golden brown.
  • Serve with salt or African hot sauce.

Variation

Serve sprinkled with sugar as a snack or for dessert.

Boiled plantain are more common than fried plantain and are better for you. They are less expensive to prepare and make a great side dish for any African meal.

To boil plantains, peel and cut each plantain into two or three pieces, and boil until tender.

Tip

Plantain can be cooked even when they're unripened and green.
