Safari Food

Safari Loaf Recipe

Our Kenyan cooking recipe collection includes this great idea for Safari food that you bake ahead and pack for the trail.

This loaf is full of wonderful, rich ingredients, and it keeps well for days when wrapped in foil and tucked into your pocket. Finding yourself enroute between stops can mean there's no place to stop for food and drink, so brining along your own snacks is essential.

The roads in Kenya are very unpredictable and being prepared for emergencies when setting out on any travel there is just good sense. Having some emergency food packed for the adventure is a must.

Ingredients

  • 3 cups whole wheat flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon each of allspice and ground cloves
  • 2 teaspoons ground cinnamon
  • 1 cup chopped nuts - cashews or macadamias
  • 1 cup pitted chopped dates
  • 1 cup dried cherries

  • 1 cup softened butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup mashed banana
  • 1 cup chopped pitted olives
  • 1/2 cup maple syrup
  • orange juice as needed

Method

  • Preheat oven to 350F
  • Sift together all dry ingredients as above (9 items)
  • Beat eggs until foamy, then by hand, mix in the butter, sugar, and mashed bananas until creamy
  • Add olives, maple syrup, orange juice
  • Add wet ingredients to dry mixture and gentley mix together until just blended
  • Fill 2 or 3 greased and floured loaf tins to about 3/4 full
  • Bake 1 hour or until wooden skewer comes out clean in middle. Cool in the pans.

Variation

You can wrap the loaves in brandy-soaked cheese cloth, cover in foil, and store in refridgerator for several days to ripen.
